Recipe - Orange Asparagus and Tarragon Salad

This recipe certainly celebrates spring with sweet citrus, fresh herbs and spicy radish along with the ultimate spring vegetable, asparagus. Tarragon is a classically French ingredient for vinaigrettes and dressings which adds a slight anise flavour to this salad.
Ingredients
Serves 6-8
- 2 oranges
- 1/4 cup olive oil
- 1 Tsp. lemon juice
- 1 Tsp. Dijon mustard
- 1 shallot, finely chopped.
- 1/4 Tsp. salt
- 1/4 Tsp. freshly ground pepper
- 2 bunches of green asparagus
- 1 bunch small red radish, finely sliced.
- 200g mixed salad greens
- 2 Tbsp. fresh tarragon, roughly chopped.
Method
- Grate the zest from one orange into a screw top jar.
- Supreme both oranges and set aside. Squeeze the juice out of the remains of the oranges and add to the dressing jar.
- Add, oil, lemon juice, mustard, shallot, and salt and pepper to the dressing jar. Shake vigorously and set aside for the shallots to lightly pickle in the dressing.
- Blanch the asparagus and quickly chill in ice water.
- In a salad bowl, combine the lettuce, asparagus, radish, orange segments and tarragon.
- Pour over the dressing. Toss and serve.
About the Recipe
- This recipe is suitable for vegetarians and vegans.
- What does it mean to supreme an orange? It is basically a technique of cutting the orange into segments so as to remover the white pith and the membranes between the segments. Google it, there are plenty of video posts to show you how to do it.
- Whilst adding great flavour, mustard also help the dressing emulsify. Oil and water are enemies, and the mustard will bond with both, thereby keeping the dressing mixed.
- I prefer to use Mexican tarragon rather than French tarragon. It has a stronger flavour and I have managed to grow perennial Mexican tarragon successfully, so always have it in my herb garden.
