Recipe - Roasted Vegie Pasta Bake

Roasting vegetables brings out their natural sweetness and intensifies their flavours. Combined here with pasta, sauce, and cheese they create a comforting meal for sharing with family and friends. This recipe makes enough to feed a crowd or one for now and one for later.
Ingredients
Serves 8-12
- 1 whole bulb garlic
- 1/4 cup olive oil
- 400g kumara, peeled & roughly chopped.
- 1 red onion, roughly chopped.
- 1 red capsicum, roughly chopped.
- 1 Tsp. dried oregano
- 1 zucchini, remove core & roughly chop.
- 500g dried elbow pasta
- 2 x 400g bottles tomato pasta sauce
- 250g sour cream
- 1/4 cup basil paste
- 1/2 cup olives, roughly chopped
- 120g baby spinach, roughly chopped.
- 3 cups grated cheddar cheese.
- Salt and pepper to taste.
Method
- Preheat the oven to 180C fan forced.
- Wrap the garlic in foil with a little olive oil.
- Mix together the kumara, onion, capsicum, and oregano with the remaining oil.
- Place veggies and garlic, on a large, lined baking sheet. Bake for 15 min. Add the zucchini to the tray and bake for another 25-30 minutes or until the vegetables are almost cooked.
- Cook the pasta according to the packet. Drain and reserve 1 cup of the cooking liquid.
- Squeeze out the garlic and mash to a paste.
- In a large bowl, combine: - garlic, vegetables, pasta, pasta sauce, sour cream, basil paste, olives, spinach, pasta water, 1 cup of cheese & salt and pepper.
- Divide the between 2 lasagne baking dishes.
- Cover with remaining cheese. Bake at 180C for 25-30 minutes.
About the Recipe
- This recipe is suitable for vegetarians but not for vegans.
- Buy the best pasta sauce that you can afford as some cheaper brands can be quite acidic. The "Mutti" brand has a good reputation for quality Italian tomato-based products.
- You can make this recipe well in advance and just bake when required.
- You can customize the roasted vegetable based on your preferences and what's in season. For Example:- carrots, mushrooms, eggplant or broccoli.
- Just add the more delicate vegetables a little later in the roasting process as they will not need as long to cook.
